Bernardos Mermeladas

for the past 20 years bernardo's mermeladas has successfully been producing jams using fruit which grows in the unesco biosphere reserve of lanzarote. the company's best seller is our cactus jam, a well-loved condiment which over time has been complemented by a variety of new flavours. our jam selection consists of around 20 different flavours. the line of goods is rounded off with our three canary sauces (mojos). in the canary cuisine the popular mojo sauces are served with meat, fish and canary potatoes. the main ingredients of the mojo sauces are grown in the unspoiled biosphere reserve. these are red and green peppers, cayenne pepper, sea salt and our own mixture of herbs, which contains coriander and thyme amongst other spices. or unique cactus fig liquor is made by centrifuging the whole fruit, the juices are fermented and filtered several times until we obtain a clear, red juice. this procedure is applied to the manufacturing of all our liqueurs, the alcohol content of which is
