azienda agricola spadafora cultivates all the vineyards in an area surrounding the cellar, using exclusively our own grapes that, at the right maturation grade, will be used to give birth to our wines. this is one of the most delicate and important duties we have since 1993, our first harvest. we cultivate the grapes according to the organic standards and starting from 2014 vintage we can use the well-known green leaf; the vinification is done without adding sulfur dioxide and using natural reagents exclusively. we also create our own yeasts, since we prepare a pied de cuve with the first grapes we harvest for the fermentation; once the process is active, we use them to inoculate the musts. this allow us to give our wines that unique scent, not coming from sulfur dioxide, but strongly related to the terroir. this premise is very important, since it can help you understand how much we do care about harvest and vinification, for us is the result and final sum of a year of hard work; al
