we source honest, wholesome produce from local suppliers who care as deeply about the food they produce as we do about how it is prepared, cooked and served. source works closely with local farmers and growers to produce the finest of food. in sligo we have access to locally grown organic vegetables, locally caught seafood and locally farmed meat. even our wine is produced from our own vineyards in the languedoc region of france – wine, after all, is one of the few things that sligo cannot do! source is about presenting the best of everything that is available in sligo and taking pride in doing so. the restaurant the restaurant in source showcases the best local organic produce available in sligo and the north west. at source we know the person who caught our fish or reared our lamb by name. through our own planting of seasonal produce and our relationship with growers and organic producers we are involved with your food from field to plate. our food is not pretentious, it’s not fussy.
