we transformed a century old over-grazed ranch in central california into a little oasis in this beautiful part of the state. by bringing in water and local shrubs, we have created a natural habitat for all sorts of animals, from quail, road-runners, golden eagles, and red hawks to kit foxes, badgers, and coyotes. we added 600 olive trees given their draught resistance and of course their natural beauty. we grow italian olive varieties, such as leccino, taggiasca, pendolino, moraiolo, and frantoio. our trees produce a fine, spicy and grassy oil. we cold-press our olives with no additional heat or chemical treatment to ensure a wonderful extra virgin olive oil. extra virgin olive oil is the gold standard of high quality cooking oils and is full of antioxidants and has anti-inflammatory value. our flavor is described as rich, robust, with a balance of bitter and peppery. it is perfect for salads but tastes great on its own with just a bit of bread. to order please visit our website.
