we contract during the actual hunting season, which we participate in thanks to good relations. this is the key to the highest possible quality and control of the raw material. we trade in fish that have been caught at sea (not in the hauling rivers, where the hormonal composition and quality of the meat changes) and immediately afterwards processed and shock-frozen. this is how they travel to you, without the possibility of saturation with extra water and chemicals. we are not a fan of farmed or overbought fish with a dubious history.
